BASIC FORMULATION INSTRUCTIONS (5 lb. Serving Size)

For Wet Batter Formulations Blend as follows:

Seafood & Vegetables Large Small
Frying Flour 5 lbs. 1 lb.
Salt 10 oz. 2 oz.
Choice of Herbs & Spices up to 5 oz. up to 1 oz.
Choice of Liquid up to 5 ¼ lbs. up to 1¼ lbs.
Meat & Poultry Large Small
Frying Flour 5 lbs. 1 lb.
Salt 20 oz. 4 oz.
Choice of Herbs & Spices up to 5 oz. up to 1 oz.
Eggs 20 7/8 lbs. 4 1/8 lbs.
Choice of Liquid up to 5 ¼ lbs. up to 1¼ lb.

Heat oil to 375°F. Mix all ingredients until just incorporated, striving for a thin batter that retains its seasoning. Dip the seafood, vegetables, meat or poultry into the batter and place in the heated oil. Food item will typically be done inside when it floats to the top of the fryer, generally after cooking for 2-3 minutes or until golden brown outside.

For Extra Crispy Formulations:

Combine the respective dry ingredients only in an additional separate bowl. Dip the seafood, vegetables, meat or poultry in the wet batter first, allowing to drip off well. Then, dip into the dry mix before placing into the heated oil. Fry at 375°F. Food item will typically be done inside when it floats to the top of the fryer, generally after cooking for 2-3 minutes or until golden brown outside.
