1. SEASONED DRY MIX:
- 2 ¼ cups (355g) Gluvana Complete™ Gluten-Free Frying Flour
- 2 tsp. (9g) garlic powder
- 1 tsp. (3.5g) poultry seasoning
- 1½ tsp. (5g) ground, black pepper
- 1 tsp. (5g) salt
2. CRISPY WET MIX:
- 1 cup (158g) Gluvana Complete™ Gluten-Free Frying Flour
- 1 tsp. (5g) salt
- 2 tbsp. (29.6g) Italian Dressing seasoning mix
- 2 large (114g) eggs – beaten
- Up to 1¼ cup (158mL) Buttermilk
Directions:
- Heat oil to 325ºF.
- Combine the ingredients for the Seasoned Dry Mix in a medium-sized bowl; set aside.
- In a large bowl, combine all ingredients for the Crispy Wet Mix whisking together the egg and butter milk; gradually add the dry ingredients to it. This batter must be thin.
- Dip chicken in the Seasoned Dry Mix, then into the Crispy Wet Mix, allowing the excess to run off well. Then dip once more in the Seasoned Dry Mix.
- Lay chicken loosely in the hot oil. Turn the chicken only once or twice while it cooks. When it’s done, the chicken will rise to the top of the pan.
