Ingredients:

2 cups (340g) Gluvana® Self-Rising Gluten-Free Baking Flour

1/2 cup shortening

2 large eggs
-
1 cup sugar
-
2-3 tsp. vanilla extract (to taste)

5-6 very, very ripe bananas
Directions:
Preheat oven to 320°F.
- In a large bowl, mix shortening, eggs, and sugar by hand.
- In a separate bowl, mash the bananas.
- Add the mashed bananas to the shortening/egg/sugar mixture and continue to mix.
- Add the Gluvana ® and mix in.
- Add the vanilla extract and mix until just incorporated.
- Pour the batter into a greased loaf pan, floured with Gluvana Complete™ Gluten-Free All Purpose Base.
- Bake for approximately 40 minutes or until bread tests done with a toothpick.
